Apple Butter Cake




  • 250g Dairy free Butter (Nutlex)
  • 250g Brown caster Sugar
  • 350g Self-raising flour
  • 4 Eggs
  • 1/2 tsp Bicarb soda
  • 1 tsp Baking powder
  • 1/2 cup Soy milk
  • 2 Red delicious Apples sliced
  • 2 tsp Vanilla extract
  • 1 tbl sp Icing Sugar

Pre-heat the oven to 180°C.

Using an electric mixer, beat butter and brown sugar until sugar has softened.

Add all four eggs and beat until fluffy.

Swift the self-raising flower together with the bicarb soda and baking powder.

Add the flour and vanilla extract into the beaten egg mixture and beat for further three minutes on high.

Once the dough is light and fluffy spread the mixture into a cake tin and half way through spread one sliced apple. Fill the tin with remaining dough and spread the remaining apple slices on top. Let the apples sink into the dough slightly.

Bake for 40 minutes or until skewer inserted in centre of the cake comes out clean.

Once cake is out of oven, leave it in the tin until it is completely cool.

Dust the cake with icing sugar before serving.

(PS: You could use either gluten free or wheat self raising flour)
