- 1 Cup Black-eyed peas
- 1 Onion
- 10 Curry leaves
- 2 Dried Chillies – thinly sliced
- 2 Cups Desiccated Coconut
- 3 Cups Water
- 3 tble sp Coconut oil
- 2 thinly sliced Spring Onions
- 1/4 tsp Sea salt
Rinse black-eyed peas and soak in warm water for half an hour.
Boil the soaked peas in three cups of water until softened (for aprox: 40 minutes)
Fry onions until golden brown and add curry leaves and let it fry for one muniute.
Add desiccated coconut and let it roast through for two minutes.
Add finely sliced dried chillies and 1 spring onion and let it fry for half a minute.
Add the boiled peas into the roasted coconut & onion mixture and stir it though.
Add salt to taste and garnish with Spring Onion.
