- 2 Fresh Zucchinies grated
- 2 Eggs
- 2 Spring Onion sliced
- 5 tble sp Multi-grain flour
- Sea salt to taste
- Olive oil/ Unrefined coconut oil
Mix grated Zucchini, eggs, sliced spring onion, salt and Multi-grain flour in a bowl.
Heat the oil, pour one or two full table spoons of zucchini mix onto the frying pan and fry both sides until golden brown.
Serve immediately with mayonnaise or your favourite sauce.
(Multi-grain flour is high in protein and available at Indian grocery stores. Use whole Buckwheat flour or gluten free flour mix if you are gluten intolerant)
