- 2 Sheets of dairy free Puff Pastry (cut into 4 squares)
- 1 Egg white
- 1 Can of Sandwich Tuna
- 1 Onion
- 4 Potatoes
- 1 Red Capsicum
- 2 Yellow Peppers
- 4 Curry leaves finely sliced
- 1/2 tsp black ground Pepper
- Sea Salt to taste
- 1/2 Lemon
- 1 tsp Turmeric
- 1 tsp Plain Curry Powder
- 1 Raw Chilli sliced
Preheat oven to 180 degrees centigrade.
Defrost Puff Pastry overnight (leave it in the fridge)
Boil the potatoes, slice them and leave aside.
Fry onions, capsicums and yellow peppers all together for about 15 minutes.
Add the can of tuna and curry leaves and stir well.
Add turmeric, curry powder, black pepper, raw chilli and salt.
Add the boiled potatoes and mash the mixture and add lemon juice.
Turn off heat and leave the mixture aside to cool down.
Cut pastry sheets into 4 squares each and spoon in the mixture into the puff pastry squares.
Fold the pastry squares and brush with egg white.
Bake for 30 minutes or until light golden.
