- 750g Chicken Niblets (I used free range chicken)
- 3 Medium sized Red Capsicums, sliced
- 1 tsp Cinnamon powder
- 2 tsp Plain Curry powder
- 1/2 Lemon
- 1/4 Cup Vegetable oil
- 3 tbl sp Coconut oil
- 1 tsp Sea salt
- 1 tsp Cracked pepper
Heat the oil (both vegetable oil and coconut oil together) on medium heat, in a medium sized deep pan. I find the coconut oil gives the dish a beautiful coconut flavour.
Add the chicken niblets and let it fry for 20 minutes turning on both sides until it is golden brown.
Sprinkle with Salt, Cinnamon powder and Plain Curry powder over the chicken and let it cook for further 5 minutes.
Add the sliced Red Capsicums and Cracked Pepper and stir the chicken mixture, cover with a lid and let it cook for another 15 minutes.
Once the capsicums are softened sprinkle with Lemon juice and turn off heat.
Serve with rice.
