- 2 handfuls of Pennywort leaves (100g)
- 1 Spanish Onion
- 4 tbl sp desiccated coconut
- 1 Raw chilly (optional)
- 1/2 Lemon
- 1/2 Pomogranate
- Sea salt to taste
Rinse the pennywort leaves and leave it in the colander for a few minutes to drain the water.
Thinly slice the leaves and leave it in a bowl.
Thinly slice one onions and add to the sliced leaves.
Add desiccated coconut and a thinly sliced raw chilly and mix it all together.
Squeeze half a lemon and sprinkle salt to taste. Squeeze the juice of the pomogranate and mix it though.
Garnish with pomogranate seeds.
