Pennywort (Gotu Kola) salad

Dairy & Gluten free Pennywort (Gotu Kola) salad


  • 2 handfuls of Pennywort leaves (100g)
  • 1 Spanish Onion
  • 4 tbl sp desiccated coconut
  • 1 Raw chilly (optional)
  • 1/2 Lemon
  • 1/2 Pomogranate
  • Sea salt to taste

Rinse the pennywort leaves and leave it in the colander for a few minutes to drain the water.

Thinly slice the leaves and leave it in a bowl.

Thinly slice one onions and add to the sliced leaves.

Add desiccated coconut  and a thinly sliced raw chilly and mix it all together.

Squeeze half a lemon and sprinkle salt to taste. Squeeze the juice of the pomogranate and mix it though.

Garnish with pomogranate seeds.
