Peppers with Broccolini Stir-Fry

Dairy free and Gluten free Broccolini with Peppers

 

 

  • 3 Red or Yellow Peppers, diced
  • 1 Bunch of Broccolini, diced
  • 1 Inch piece of Ginger. peeled and diced
  • 1/2 tsp Turmeric
  • 3 Spring Onions, diced
  • Sea Salt & Cracked Pepper to taste
  • 1/4 Lemon
  • 3 tbl sp Olive Oil
  • 3 tbl sp Water

Heat olive oil in a pan and fry the onions and peppers until softened.

Add diced ginger, diced broccolini, turmeric, salt & pepper and cook for about 3 minutes while string.

Sprinkle with water, turn off heat and cover with
a lid and leave for 1 minute and let the steam cook it through.

Dairy free and Gluten free Broccolini with Peppers

Sprinkle with lemon juice and serve.
