- 3 Red or Yellow Peppers, diced
- 1 Bunch of Broccolini, diced
- 1 Inch piece of Ginger. peeled and diced
- 1/2 tsp Turmeric
- 3 Spring Onions, diced
- Sea Salt & Cracked Pepper to taste
- 1/4 Lemon
- 3 tbl sp Olive Oil
- 3 tbl sp Water
Heat olive oil in a pan and fry the onions and peppers until softened.
Add diced ginger, diced broccolini, turmeric, salt & pepper and cook for about 3 minutes while string.
Sprinkle with water, turn off heat and cover with
a lid and leave for 1 minute and let the steam cook it through.
Sprinkle with lemon juice and serve.
