- 1 Slice of Salmon
- 1/2 tsp Chilli flakes
- 1/4 Sliced Lemon
- 2 Springs of Coriander leaves
- 1/4 tsp Sea salt or Pink Himalayan salt to taste
- Banana leaf (wide enough to cover the slice of salmon)
- Aluminium foil
- 1 tsp Unrefined Coconut oil
- 1 tsp Olive oil
Preheat oven to 200 degrees centigrade.
Rub coconut oil on both sides of the banana leaf and hold the leaf above the flame, turning both sides for one minutes (warming the banana leaf is necessary in order to stop the leaf from splitting).
Place the banana leaf on top of the aluminium foil and place both on a baking tray. Place the salmon on the banana leaf and sprinkle with lemon juice, chilli flakes. olive oil and sea salt.
Place Coriander leaves and lemon slices on top of salmon.
Fold the banana leaf and fasten with tooth-picks.
Fold with aluminium foil and bake for 20 minutes.
Serve with baked Sweet Potatoes (Recipe coming soon)
(Salmon wrapped in banana leaf gives a beautiful smokey flavour to the dish).
