Tomato Brown Rice

Brown rice doesn’t have to be dry and tasting like cardboard. You can make it more palatable by giving it some flavour.

  • 2 Cups Brown Rice
  • 2.5 Cups Water
  • 4 Tomatoes chopped
  • 1 tsp. Cumin Seeds
  • 1 Onion
  • 4 tbl spn Olive Oil
  • Sea salt to taste

Rinse the brown rice and add 2.5 cups of water, cover with a lid and let it boil until cooked for 40 minutes. Turn off heat and leave aside.

Fry diced onions until golden brown, add cumin seeds and let it fry for half a minute.

Add the chopped tomatoes to the onion mixture and salt to taste. Crush the tomato mixture with a spoon and let it cook for about 6 minutes while stirring.

Add the cooked brown rice to the tomato mixture and stir it through.

Serve with dhal, salmon or chicken curry.
