Sweet Potato with Radicchio

  • 4 Sweet Potatoes
  • 1 tsp Cumin powder
  • 8 tble sp Olive oil
  • 1 tsp Sea salt
  • 1/2 tsp Cracked pepper

Pre-heat oven to 190 degrees centigrade.

Rinse Sweet Potatoes.

Slice Sweet Potatoes into round pieces and place in a baking tray.

Sprinkle with cumin powder, salt and olive oil and mix it well and place it in the oven for 30 minutes.

After 30 minutes of baking turn the sweet potatoes (toss it well) and let it bake for further 15 minutes.

While the sweet potatoes are baking, rinse and slice Radicchio.

Once Sweet potatoes are cooked add the sliced radicchio immediately while it is still warm and toss it all together.

(If you don’t like the flavour of Cumin Powder, you can add smoked Paprika, Sweet Paprika or Turmeric powder instead. Alternatively, add 1 tsp Chilli flakes if you like it spicy. Flat leaf Parsley is a good substitute for Radicchio)
